One more apple recipe for fall . . .

This recipe is my answer to 'fresh apple cake'.   My wonderful Mother-in-law makes THE BEST fresh apple cake EVER.  It has more than a cup of oil in it!  I really love hers and this one is not as good but it uses just a
1/ 4 cup of butter instead of the oil . . .so for a lower cal version this one is delicious!

Fresh Apple Cake
1/4 c. butter
1 c. sugar
1 egg
1 c. flour
1 t. baking soda
1/2 t. salt
1/2 t. cinnamon
1/2 t nutmeg
1/2 c chopped pecans
2 cups peeled, finely chopped or grated apple (Granny Smith are best!)

Cream butter and add sugar beat til light and fluffy.  Add egg, blend well.  Combine dry ingredients, then stir into creamed mixture - stirring well.  Stir in apples and pecans.  Bake in greased 8 inch square dish and bake at 350 for about 35 minutes or until done.  Really good served warm with cool whip or low fat ice cream.
