Christmas Recipes

Everybody is posting some recipes, so I thought I would too.  Here are two easy things I made to take places at Christmas or use at home for friends and family:


Cheeseball (easiest one ever and everyone loves it)

2 packs low fat cream cheese
1 small can crushed pineapple in juice - DRAINED VERY WELL
1 Tablespoon minced green pepper
1 Tablespoon minced onion
1 Tablespoon seasoning salt
dash or two of worchestshire sauce (how do you spell and say this???)
pecans

Combine softened cream cheese and next four ingredients - form into ball and chill.  When firm roll in pecans and serve with crackers and vegie sticks!

Buckeyes (peanut balls)  (this recipe was Danny's grandma's!)

1/1/2 c. crunchy peanut butter
1/ 1/4 sticks butter (light butter works!)
1 and 1/4 box powedered sugar
1 t. vanilla
12 ounces semi sweet choc chips
paraffin wax

Mix peanut butter, butter, sugar and vanilla.  Roll in 1 inch balls.  Melt chips and 1/4 to 1/2 cake of paraffin wax in double boiler over water.  Dip balls in chocolate and set on platter till firm.  These are great to make ahead and freeze!
