Apples of Gold

"A word fitly spoken is like apples of gold in settings of silver."  Proverbs 26:11


Fall means . . .many things including APPLES!   Here are 3 of my favorite apple recipes:


Apple - Walnut Cake with Glaze (this is a rich cake - special occasions!)

2 cups sugar
1 cup oil
3 eggs, beaten
 t. salt
1 t. baking soda
3 cups flour
2 t. vanilla
3 cups peeled and diced apples (granny smith!)
2/1/2 c walnuts (divided)
1 cup light brown sugar
1/2 cup butter
2/3 cup evaporated milk


Beat first 4 ingredients at medium with mixer until blended .  Add baking soda, beat 2 to 3 minutes until disolved.  Gradually add flour.  Stir in vanilla, apples and 1 cup walnuts.  Pour into 2 greased 9 inch round cake pans.
Bake 325 for 45-50 minutes.  Cool on wire rack 1 hour.
Glaze:  Stir brown sugar and butter in saucepan over medium heat  about 3 - 4 minutes stirring constantly until fully disolved.  Let boil 2 to 3 more minutes till thickened, stir constantly.  Chill for an hour before spreading on cooled cake.  Use remaining walnuts to sprinkle over cake.



Apple Crunch (this recipe comes from a friend who mentored me when I was newly married - delicious and easy!)

Granny Smith Apples
1 cup flour
1 cup sugar
1 t. baking pwder
2 Tablespoons butter
1/4 teaspoon salt
1 beaten egg
cinnamon



Peel and slice (thinly)enough Granny Smith Apples to fill an 8 inch square baking dish.  Mix flour, sugar, baking powder, sat and then cut in butter.  Add beaten egg and stir just til moist.  Sprinkle on apples, then sprinkle with cinnamon.  Bake a 350 for 30 - 40 minutes.  May double for 13 by 9 inch pan.



BAKED APPLES in crock pot   (this one is LIGHT!)

Core 6 Granny Smith Apples and place in crock pot with 1/8 cup of water.  Sprinkle with cinnamon and cook on low all day.  When apples are tender, make COOK AND SERVE vanilla pudding ( I use sugar free and fat free milk).  Serve each apple with hot vanilla pudding poured over the top and sprinkled with more cinnamon.  DELICIOUS!  . . .and your home smells like FALL!
